My Grandmother's Blueberry Pancake #Recipe by Karen Rose Smith


This is a recipe my grandmother made for me whenever I'd spend overnights with my grandparents. I looked forward to morning and cooking in the kitchen with her. When blueberries were in season, they were doubly good.  So here is my grandma's home made blueberry pancake recipe.

My Grandmother's Blueberry Pancakes

Beat 4 eggs well with a whisk (very important)
Add--
1 cup of milk
1 cup of sugar
1 teaspoon vanilla 
2 teaspoons baking powder
2 cups of flour
1 1/2 cups of blueberries 

After whisking eggs, mix in the milk, sugar, vanilla, and baking powder.  Stir in the flour 1/2 cup at a time until the mixture is the consistency of cake batter.  Drop with a ladle onto a medium hot griddle or skillet. (My grandma used a cast iron pan.) Wait until bubbles form on top surface before flipping.  You can also sprinkle them with cinnamon right off the griddle and serve with apple butter or butter and syrup.
