Marinated Carrot-Onion Salad #Recipe




Most of our favorite recipes are those I've collected over the years. This cold carrot salad is especially good for picnics.  I found the recipe about 30 years ago when we went on a "farm" vacation to Canada near Kitchener. When I was a child, I enjoyed special times on a cousin's farm. I wanted our son who was about 12 to have a similar experience. We stayed on a working dairy farm for a week. It was a wonderful experience none of us will forget. The farmhouse had a beautiful hand crafted wood ceiling in the kitchen and the family cooked with fresh dairy cream and harvested vegetables for dinner from their garden. This recipe came from the Shakespeare Presbyterian Church Cook Book. Enjoy!


Marinated Carrot-Onion Salad


2 pounds carrots, cut into diagonal slices 1/4 inch thick
2 medium onions, thinly sliced
1 medium pepper, seeded and cut into strips
Half 10 ounce can tomato soup
1/4 cup sugar
1/2 cup vegetable oil
1/2 teaspoon dry mustard
1/3 cup vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
Dash of Worcestershire sauce

Cook carrots until tender (6-8 minutes).  Do not overcook.  Drain and put into bowl.  Add onion rings and green pepper.  In a small jar, combine remaining ingredients.  Shake to blend and pour over vegetables.  Stir.  Marinate several hours or overnight in the refrigerator.


Note:  Marinade can also be used as a salad dressing.  Refrigerated salad and dressing keep well for a few days.
