Cinnamon #Scone #Recipe created by Karen Rose Smith




When I developed the cinnamon scone recipe for my latest cozy release, MURDER WITH CINNAMON SCONES, it became a favorite.  I've made it multiple times.  I hope you like it too!



Daisy's Cinnamon Scones

Preheat oven to 400 degrees

2 cups all-purpose flour
1/3 cup granulated sugar plus 2 tablespoons
1 teaspoon cinnamon (1/2 teaspoon in dough and 1/2 teaspoon mixed with 2 tablespoons sugar)
1 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon salt
8 tablespoons (1 stick) grated unsalted butter (I let it sit out 5-10 minutes before grating)
3/4 cup cinnamon chips
1/3 cup ground pecans
1 large egg
3/4 cup reduced fat buttermilk

In a large mixer bowl, stir together flour, 1/3 cup sugar, 1/2 teaspoon cinnamon, baking powder, baking soda and salt.  Add grated butter to flour mixture and beat it in.  Stir in cinnamon chips and pecans. 
 
In a separate bowl whisk the egg with the buttermilk, then mix into flour dough with mixer.  Scoop out eight large scones (I use a 1/4 cup scoop or measuring cup with handle) and place on a cookie sheet lined with parchment.  Sprinkle with cinnamon/sugar mixture.  Bake 17-19 minutes at 400 degrees until golden brown.

Bella's Old-Fashioned Coconut #Cake #Recipe from Shades of Wrath by Karen Rose Smith




So many traditions are attached to the holidays. Favorite recipes and baking always play a part in my family's.  Since many of my traditions belong to my sleuth, Caprice De Luca, she bakes and cooks with her loved ones and friends for special days.  Her sister Bella developed this old fashioned coconut cake recipe that you can find in Caprice's latest sleuthing adventure SHADES OF WRATH--Book 6 in my Caprice De Luca home staging mystery series.  SHADES OF WRATH also contains two other recipes--a main dish and a salad.  Its release day is November 29, 2016 but you can pre-order it now!

Bella's Old Fashioned Coconut Cake

Preheat oven to 375 degrees.

1/2 cup solid coconut oil
1 3/4 cups granulated sugar
5 egg whites
1 whole egg
1 1/2 teaspoons vanilla
1 cup unsweetened coconut milk (I use Silk Coconut Milk)
1 teaspoon salt
3 teaspoons baking powder
1 teaspoon baking soda
2 1/2 cups flour

In electric mixer, cream the coconut shortening with the sugar.  Add eggs slowly and mix until batter is smooth.  Add salt, baking powder and baking soda.  Mix until blended.  Add vanilla and coconut milk and mix just until blended.  Add flour 1/2 cup at a time, mixing two minutes or until batter is smooth.

Pour evenly into a 9 x 13 inch greased and floured pan.  Bake at 375 degrees for 25-30 minutes or until toothpick comes out clean.  (Or you can make a layer cake as pictured at the top of this post.)
                                                    
Frosting

1 stick (1/2 cup) margarine (softened)
½ cup Crisco

Cream together the softened margarine and Crisco.  To this mixture add:

1 cup granulated sugar
3 tablespoons flour (1 at a time)
2/3 cup coconut milk (This should be tepid temperature and added slowly.  I use Silk Coconut Milk)
½ teaspoon vanilla

Beat 8-10 minutes at high speed until frosting is smooth.  Spread over the cake and sprinkle the top with flake coconut.

Quick Summer Meal--Flatbread #Pizza #Recipe by Karen Rose Smith


In the summer, I look for quick meals to make, not only for convenience but so I don't heat up the kitchen for too long. This week at the grocery store, I picked up a pack of thin crust flatbreads.  A six pack--size 12 x 4 each--was on special. It was available in plain, wheat, and garlic.  I bought the plain. Our toppings jazz it up.

I'd picked up fresh local tomatoes at the nearby Amish market and used those, along with turkey pepperoni, Parmesan cheese, mozzarella cheese and spices. Here is the recipe I use to make a quick, healthier version of pizza.

Warm the six flatbread pieces for five minutes in a 375 degree oven on 2 cookie sheets.  Then...

3 lbs. tomatoes, sliced VERY thin  Place on a platter and sprinkle with 1 tablespoon salt and 2 tablespoons sugar (You can let off the sugar for a healthier topping.)

1 pack turkey pepperoni (I use Hormel, 6 oz. pack)

5 tablespoons oregano or more if you like spicier

1 cup Parmesan cheese

16 ounces of grated mozzarella cheese (I use part skim.)

After the flatbreads have warmed five minutes, sprinkle with Parmesan cheese.  Spread the tomato slices on top.  Sprinkle with oregano.  Cover the tomatoes with the pepperoni, then spread on the mozzarella cheese!  Bake in 375 degree oven for ten minutes.  The edges of the flatbread should be crispy.

Nikki's Carrot Surprise #Cake #Recipe from Cozy #Mystery Silence Of The Lamps by Karen Rose Smith





I like to have a few recipes up my sleeve for those special celebrations--holiday gatherings with friends and family, birthdays and graduations. This cake always delights my guests. I developed this recipe years ago when a friend told me her husband particularly liked carrot cake. I baked it for his birthday.  The recipe seemed perfect to use for my sleuth's sister Nikki's piece de resistance for the wedding expo in THE SILENCE OF THE LAMPS.  I hope you enjoy it too. 



Nikki's Carrot Surprise Cake

Preheat oven to 350 degrees
Grease and flour 9 x 13 inch pan

1 ½ cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons cinnamon
1 teaspoon orange zest
1 ½ cups sugar
1 cup vegetable oil
3 eggs
1 ½ cups shredded carrots
½ cup crushed pineapple, drained
½ cup chopped walnuts
1 cup flaked coconut

Stir together the flour, baking powder, baking soda, salt, cinnamon and orange zest in a large mixer bowl.  To that mixture add sugar, oil and eggs.  Beat on medium speed for about one minute until well-mixed.  Then fold in carrots, pineapple, walnuts and coconut until completely blended. 

Pour into 9x13" greased and floured cake pan.  Bake at 350 degrees for 35 minutes or until toothpick comes out clean.  Let cool completely before frosting.  After the cake is iced, refrigerate until you are ready to serve it.

Cream Cheese Frosting

½ cup butter (softened)
1 package (8 ounces) cream cheese (softened)
1 teaspoon vanilla
½ teaspoon orange zest
1 box (1 pound) Confectioners Sugar

Beat softened butter with softened cream cheese until smooth.  Add vanilla and orange zest.  Blend in Confectioners Sugar and beat until smooth and spreadable. Frost the cake and refrigerate until you are ready to serve it.

Caprice's Easy Beef Bourguignon #Recipe from SILENCE OF THE LAMPS by Karen Rose Smith



Most cooks look for recipes to make their lives easier. In my new release SILENCE OF THE LAMPS, my sleuth Caprice has a sister who is a caterer. Caprice stages houses for high end clients, having elaborate open houses that include buffets catered by Nikki. Nikki makes Beef Bourguignon for an open house that brings a bit of conflict into their lives. Caprice transforms Nikki's recipe into a slow cooker version that's easy to make. Here it is!  Enjoy.

Caprice's Easy Beef Bourguignon

from SILENCE OF THE LAMPS


Coat 5 quart slow cooker with nonstick spray.

6 slices bacon (keep 3 tablespoons of the drippings)
2 ½ pounds stewing cubes
2 cups flour
1 ½ teaspoons salt
½ teaspoon pepper

Fry bacon and remove from the drippings.  When it is cool, crumble it and set aside in the refrigerator.  Save three tablespoon of the drippings to use in preparation.

Dry beef cubes as much as possible with food-friendly paper towels.  Combine flour, ½ teaspoon salt and ½ teaspoon pepper in a Ziplock bag.  Drop in a few stewing cubes at a time to coat them, then place the coated cubes in the crock pot.

1 cup chopped onion
1 cup peeled and sliced carrots
1 cup chopped celery
1 clove garlic (grated)
1/8 teaspoon marjoram
1 teaspoon salt
½ teaspoon pepper
3 cups beef broth (I use Swanson with no MSG)
1 ½ cups white burgundy wine
A tiny pinch of red pepper flakes (4 to 5 flakes)

Add onion, carrots, celery, marjoram, garlic, one teaspoon salt, ½ teaspoon pepper and the pinch of red pepper flakes (4 to 5 flakes).

Pour broth over the mixture, add three tablespoons bacon drippings and the wine.  Cover and cook on low for five hours or until beef cubes are tender.  Stir every two hours for a smooth gravy base (with no flour lumps!).

Serve over noodles (I use a pound of wide egg noodles) and top with crumbled bacon.

Serves six to eight.
