Cinnamon #Scone #Recipe created by Karen Rose Smith




When I developed the cinnamon scone recipe for my latest cozy release, MURDER WITH CINNAMON SCONES, it became a favorite.  I've made it multiple times.  I hope you like it too!



Daisy's Cinnamon Scones

Preheat oven to 400 degrees

2 cups all-purpose flour
1/3 cup granulated sugar plus 2 tablespoons
1 teaspoon cinnamon (1/2 teaspoon in dough and 1/2 teaspoon mixed with 2 tablespoons sugar)
1 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon salt
8 tablespoons (1 stick) grated unsalted butter (I let it sit out 5-10 minutes before grating)
3/4 cup cinnamon chips
1/3 cup ground pecans
1 large egg
3/4 cup reduced fat buttermilk

In a large mixer bowl, stir together flour, 1/3 cup sugar, 1/2 teaspoon cinnamon, baking powder, baking soda and salt.  Add grated butter to flour mixture and beat it in.  Stir in cinnamon chips and pecans. 
 
In a separate bowl whisk the egg with the buttermilk, then mix into flour dough with mixer.  Scoop out eight large scones (I use a 1/4 cup scoop or measuring cup with handle) and place on a cookie sheet lined with parchment.  Sprinkle with cinnamon/sugar mixture.  Bake 17-19 minutes at 400 degrees until golden brown.

A Happy #Feline Mother's Day--#Cats This Week by Karen Rose Smith



Once a mother...always a mother! Mother's Day made me think back over all of the beautiful moments and memories of Halo's pregnancy, the birthing of her kittens and her role as a mother. Witnessing her giving birth to three beautiful kittens and her devotion as a new mother was an experience I will always treasure. 


Even though Miss Paddington, her first-born kitten that we adopted along with Halo, has grown into a beautiful adult feline, they still share a special bond. The photos below celebrate that bond...one that I hope everyone can share with their own mothers...whether it be in person or through memories of times past.

I've Got Your #Feline Back--#Cats This Week by Karen Rose Smith






Cats can assume some pretty contorted positions when sleeping. Most felines sleep on their sides, often on guard with their eyes slightly open. Some of my favorite cat photos are my furry babies sleeping on their backs. There are several theories as to why they choose to sleep in what seems an unnatural position for cats. The simplest reason is that they are comfortable. A cat in this position has also been referred to as "a cool cat" because they are simply cooling themselves. Another more medical explanation is that sleeping on the back helps a cat breathe better. That theory could hold some truth because both Halo and Zoie Joy have some respiratory/asthmatic issues and they are the two who most often sleep that way. I like to believe a cat in this position is exhibiting total trust and it is a comforting signal that I am the person to whom they are showing this special display of affection.

I looked back over my most recent feline snapshots and found some of my favorite "I've Got Your Back" photos.      









Having observed how skittish and mistrusting Bonnie and Clyde, our outside feline visitors, can be and how long it has taken to develop even the slightest bit of trust to allow us to touch them, I can certainly appreciate the special bond I share with my inside furry family--Halo, Paddington, Zoie and London. And I feel that sleeping on their back is their way of showing me that they appreciate all my patience and care.

#Feline Portrait Poses--#Cats This Week by Karen Rose Smith


When I am not immersed in writing, editing or promotion, I love to take photos.  My favorite subjects are my gardens and my cats. I am by no means a professional photographer...I just love to take pictures of the things I hold dear. I love to look at the photo collages I have incorporated into my decorating schemes. I also enjoy glancing back over the digital files that I have on my computer and my electronic tablet. They spark memories...sometimes happy....sometimes sad...but always in living color, unlike the faded snapshot prints that are stored in photo albums in my closet.

This week I snapped a picture of Zoie (above) as she was sitting on the sofa with her paw draped over the armrest. The photo captured one of those rare portrait-like poses that looked like a photographer had spent hours setting up the props and the lighting to capture the perfect photo.

I immediately had the urge to look back over my files to see if I had other portrait-like photos of my furry family.  Here is what I found:

#Felines Celebrating the Arrival of Easter--#Cats This Week by Karen Rose Smith



Since the time changed in March, it seems that our feline family began making preparations for the arrival of warmer weather and Easter. The cats, as well as all of us, welcome the arrival of green grass and flowers blooming in the garden. They like the cover.  Bonnie, one of our outside feline siblings, immediately napped in  a spot under the new wicker rocker as soon as it was moved from winter storage onto the patio.

Clyde, Bonnie's sibling, had started sitting under the bare branches of the dwarf American Redbud tree even before it burst into blossom this week.  Eventually the shrub will add foliage which will provide shade and shelter from the hot summer sun. Last year it was one of Bonnie and Clyde's favorite afternoon spots.


Bonnie can often be spotted in a corner garden off of the patio as the daffodils and hyacinths bloom. She likes a spot under the re-blooming lilacs as soon as their leaves provide shade and shelter.


Also this week, the creeping phlox and the cat mint joined in the celebration of spring's impending arrival with mounds of pink and white color and fresh herbal scents. When glancing out the window, I spotted Clyde enjoying both. He has adopted this spot as a special little "nest" for his afternoon naps.

Inside, Miss Paddington and her mom, Halo, are really enjoying the spring throw on the bed.  The butterflies in bright pastel colors add that touch of spring to their inside world. Just watching them sleeping together on the throw lifts my spirits and provides impetus to pull out my spring wardrobe.



I try to take time to enjoy the changes that spring brings, whether as simple as a beautiful blooming pansy in a cat planter by the front door or as enormous as the whole landscape turning from barren brown branches to trees and shrubbery in lush green foliage.
